Anti-Inflammatory Ingredients

Kimchi is fermented, and fermented foods have been shown to have huge benefits to the gut microbiome. In short, this can help bring more ‘good’ bacteria into your stomach which in turn can boost your immune system and help reduce inflammation in the body.

Mushrooms have anti-inflammatory properties and are also one of the richest sources of vitamin D outside of meat. Vitamin D is essential in supporting healthy bones, muscles and immunity.

Garlic contains diallyl disulfide, an anti-inflammatory compound that limits the effects of pro-inflammatory cytokines. As a result, garlic can help fight inflammation and may even help prevent cartilage damage from arthritis.

Sesame seeds contain a compound called sesamin that has anti-inflammatory properties and antioxidants that can help protect cartilage. They might be small but they are mighty.

: 2                                                                                                                                                 Prep + Cooking Time: 30 minutes


Ingredients:

  • ½ Cup / 125 ml of Kimchi cut into small pieces
  • 200g sliced mushrooms
  • 1.5 cups of long-stem white rice
  • 1 crushed garlic clove
  • 1 tbsp sesame seeds
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sesame seed oil
  • 1 tsp of kimchi juice
  • 2 large eggs
  • 1 green onion chopped

Instructions:

  • Cook the rice according to the instructions on the pack.
  • While the rice is cooking, heat the olive oil in a pan on a medium heat, then add the mushrooms and garlic and cook for 5 minutes.
  • Once the mushrooms begin to go slightly brown, add the kimchi and cook for a further 3-4 minutes.
  • Set the kimchi and mushrooms to one side and fry the two eggs.
  • Set the eggs aside and heat the sesame seed oil in the pan before adding the now cooked rice with the mushrooms and kimchi.
  • Place the rice on a plate, put one egg on top of each dish and garnish with the green onion and sesame seeds before serving.
